Coconut is classified as a one-seeded drupe but can also be classified as a fruit, a nut, and a seed, which adds such a fresh taste to so many recipes which I love! As you can tell by the name of this dessert, coconut is the main base ingredient in this traditional Barbadian pastry – and let’s face it, almost everything with coconut is dreamy to eat.

Filled with an abundance of fresh coconut, maraschino cherries, and raisins, this tightly packed dessert is baked into the same rectangular shape as a loaf of bread; hence the name Coconut Bread also known as ‘Sweet Bread’ by locals. Now, not everyone bakes this bread with the moist sweet coconut center filling (seen below), but trust me, it makes a HUGE difference; it is the WOW factor, the prized possession, the GEM of the sea :). This soft filling is made with bountiful flavors of cinnamon and nutmeg, which awaken the senses with every-single-bite, and leaves my sweet tooth craving more than satisfied.
